Chorizo Hash with Fried Egg

• 1 SPAR Chorizo Ring
• 1 The Greengrocer’s onion diced
• 1 The Greengrocer’s green pepper cut into rough pieces
• 1 The Greengrocer’s red pepper cut into rough pieces
• 5 The Greengrocer’s Navan potatoes cut into 2 cm cubes
• 4 SPAR enjoy local free-range eggs
• Paprika to serve

• Oil a pan and turn to a medium heat, add the onion and cook for 3 minutes
• Add chorizo and cooked potatoes and cook for a further 5 minutes
• Add the chopped peppers and cook for 3 minutes, you want to retain that crunch!
• Turn heat down to low and in a separate pan fry the two eggs. Spoon your hash mixture onto plates/bowls and top with fried eggs
• Serve with the Paprika for an extra kick
