• 2 tbsp olive oil
• 1 The Greengrocer’s onion, finely chopped
• 1/2 The Greengrocer’s garlic clove, crushed
• 1 tsp fresh ginger, crushed
• 1 tsp ground turmeric
• 500g The Greengrocer’s carrots, peeled and chopped
• 1 tsp thyme
• 1 ltr vegetable stock
• A handful of The Greengrocer’s fresh coriander, chopped for garnish
1. Over a high heat, in a deep pan, sauté the onion, garlic, ginger and turmeric in the olive oil
2. Add the carrots, thyme and vegetable stock to the pan, season with salt and pepper, bring to the boil then simmer for 10 minutes until the carrots are tender
3. Using a food processor, puree the soup until it is smooth, adding more liquid if necessary
4. Garnish with fresh coriander and serve
