• 6 tbsp olive oil
• 1 The Greengrocer’s onion, finely diced
• 4 The Greengrocer’s garlic cloves, crushed
• 200g The Greengrocer’s spinach
• 600g SPAR Greek style yogurt
• Juice of 1/2 The Greengrocer’s lemon
• 300g SPAR Walnuts
• 2 tbsp of dried mint
1. Over a medium heat, gently fry the onion in 1 tbsp of oil for 5 minutes. Next, add the garlic and then the spinach. Once the spinach has
wilted, transfer the mixture to a baking tray and place in the freezer to chill quickly
2. In a food processor blend the yogurt with the chilled spinach mix and the lemon juice. Season to taste and pour into a serving bowl
3. In a large pan, heat the remaining oil and toast the walnuts until golden. Add the mint to the pan for a further 30 seconds, then pour directly over the yogurt mix to serve
