Autumnal Pear Bread

  • 200g finely chopped peeled ripe pears
  • 400g all-purpose flour
  • 200g sugar
  • 100g cold butter
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/8 teaspoon cinnamon
  • 50ml buttermilk
  • 1 teaspoon vanilla extract

Method

Step 1

In a large bowl, combine the flour, sugar, baking powder, baking soda, salt and nutmeg. Mix in butter until mixture resembles coarse crumbs.

Step 2

Combine the eggs, buttermilk and vanilla with the flour mixture & fold in the pears.

Step 4

Spoon the mixture into two small loaf tins & bake at 200Ā°C for 35-40 minutes or until a toothpick inserted in the centre comes out clean.

Step 5

Let the bread cool for 10 minutes in the tin before serving.

Step 6

Make your bread last longer by storing it in an airtight container & refrigerate for up to 3 days!
