• 300g left over shredded chicken/cooked chicken breast
• 4 x slices smoked bacon
• 2-3 tbsp mayonnaise
• 1 tbsp pesto
• Handful of lettuce/rocket
• 4 slices of bread or 2 rolls
• Mix the mayonnaise and pesto in a bowl. Gently add in the shredded chicken
• Grill the smoked bacon for 5 minutes until crispy
• Fill one slice of bread (or roll) with the chicken mix, two slices of bacon and top with the lettuce/rocket and the other slice of bread
