Chilli Chicken with Mango Sauce

What you'll need

• 3 The Greengrocer’s garlic cloves, crushed
• 1 tbsp fresh ginger, crushed
• 1 tsp paprika
• 1 tsp salt
• 1 tbsp SPAR vegetable oil
• 8 SPAR enjoy local chicken thighs
• 200g mango, cubed
• 2 tbsp chilli sauce
• 2 tbsp lemon juice
• A handful of The Greengrocer’s fresh coriander, chopped for garnish

1. For the marinade, combine the garlic, ginger, paprika, salt and vegetable oil into a paste

2. Brush the marinade over the chicken thighs and set aside for 1 hour

3. For the sauce, blend the mango, chilli sauce and lemon juice. Puree until smooth and set aside

4. Heat the oven to 200°C / 180°C Fan/ Gas 6

5. Place the chicken in an ovenproof dish, cover with a lid or foil and bake the chicken for 35 minutes until the chicken is cooked through

6. Remove the lid and baste with the mango sauce then bake for a further 10 minutes until golden brown and crispy

7. Garnish with coriander and serve with the remaining mango sauce and white rice
