Summer Salad Season

Ingredients

  • 1 medium sized sweet potato, cut into chunks
  • ½ a block of feta, broken into decent size chunks
  •  large handful of baby spinach

Method

 

  1. Pre-heat oven to 180*C
  2. Place the chunks of sweet potato in a large bowl, season well with salt and freshly cracked pepper and a good drizzle of olive oil. 
  3. In another bowl, add spinach leaves and feta , season with salt and pepper.
  4. Add the sweet potato and a little balsamic and gently toss.
  5. Serve and enjoy
