Ingredients
• 200g red lentils
• 1 lb boneless, skinless chicken breasts, diced
• 1 onion, finely chopped
• 2 carrots, sliced
• 2 celery stalks, sliced
• 3 cloves garlic, minced
• 8 cups chicken broth
• 1 tsp ground cumin
• 1 tsp ground coriander
• 1/2 tsp smoked paprika
• Salt and pepper to taste
• Olive oil for cooking
• Fresh parsley for garnish
Method:
1. In a large pot, sauté the chopped onion in olive oil until translucent.
2. Add minced garlic and sauté for another minute.
3. Add diced chicken and cook until browned on all sides.
4. Stir in ground cumin, ground coriander, smoked paprika, salt, and pepper.
5. Add red lentils, carrots, celery, and chicken broth. Bring to a boil.
6. Reduce heat and let it simmer for 25-30 minutes or until lentils are tender.
7. Adjust seasoning if necessary and garnish with fresh parsley before serving.
