Ingredients

  • 1 large fresh pineapple cut into rings
  • Half tsp chilli flakes
  • Half tsp cracked black pepper
  • Half tsp vanilla extract
  • 30g coconut oil melted
  • 100g demerara sugar
  • 150ml Alpro plain with coconut yogurt

Method

1. Preheat oven to 160C
2. Place all the ingredients (except yogurt) into a bowl and mix gently to combine, then tip onto a roasting tray
3. Roast for 30 minutes, every 10 minutes use the juices in the tray to baste the pineapple
4. Serve warm straight from the oven, with cold coconut yogurt
