Smoked Salmon Quiche Breakfast Bites

Ingredients

  • 6 slices of gluten free bread
  • 2 SPAR enjoy local medium free-range eggs
  • 125ml semi-skimmed milk
  • Handful enjoy local medium cheddar cheese, grated
  • 2 slices smoked salmon, chopped
  • 1 tsp olive oil to grease muffin tray
  • 1 avocado, sliced
  • Salt & black pepper to season

Method

1. Preheat the oven to 180C
2. Cut a circle out of each of the slices of bread
and press between your hands to flatten and make thinner
3. Grease a muffin tray with the olive oil and gently place the bread circles into each of the muffin holes. Bake for 10 minutes
4. While the bread is in the oven, beat the eggs and milk together in a bowl and season with salt and pepper. Pour mixture into a jug
5. Take the bread cups out of the oven and add a little bit of smoked salmon and cheese into each cup
6. Pour some of the egg mixture into the cups (fill to the top)
7. Bake for 15 minutes
8. Arrange some avocado onto each plate and season
9. Carefully remove the quiches from the muffin tray and place three onto each plate
