Crispy Chicken Salad Wrap

  • "Chicken with Attitude" Hot and Spicy Chicken
  • "Chicken with Attitude" Crispy Golden Tenders

  • Cherry Vine Tomatoes, halved
  • Coleslaw
  • Cucumber, sliced
  • Mini Peppers, sliced
  • Padrón Peppers

Method 

  1. Prepare the Air Fryer: Preheat your air fryer to 360°F 182°C.
  2. Cook the Chicken: Place both the "Chicken with Attitude" Hot and Spicy Chicken and the Crispy Golden Tenders in the air fryer basket. Cook for about 10-12 minutes, or until fully cooked and crispy, shaking the basket halfway through cooking.
  3. Prepare the Vegetables: While the chicken is cooking, wash and prepare your vegetables. Shred the lettuce, slice the cucumbers, mini peppers, and baby corn, halve the cherry tomatoes, and set aside. Lightly fry the Padrón peppers in a small pan with a bit of oil until blistered, then set aside.
  4. Assemble the Wraps: Warm the tortilla wraps for a few seconds in the microwave to make them more pliable. Lay each wrap flat and start by spreading a thin layer of coleslaw over the surface. Add a layer of shredded lettuce, followed by slices of cucumber, mini peppers, blistered Padrón peppers, baby corn, and cherry tomatoes.
  5. Add the Chicken: Once the chicken is cooked and crispy, remove it from the air fryer and let it cool slightly. Slice the chicken into smaller pieces if necessary, then distribute evenly among the wraps.
  6. Wrap It Up: Roll up the tortillas tightly to enclose the filling, tucking in the ends to secure the contents.
  7. Serve: Cut each wrap in half diagonally and serve immediately for the best taste and texture.
