Poached egg & beans

The protein in the eggs and fibre in the beans help to promote the feeling of fullness and can delay feelings of hunger. This helps concentration levels during the morning.

Ingredients:

Wholegrain or rye bread, toasted

1 x 415g tin of baked beans

4 eggs

20g grated low fat cheese (optional)

Method:

  1. Poach eggs in a poaching pan until the white is cooked through and the yolk is done to preference.
  2. Place baked beans in a small saucepan and heat through.
  3. Toast bread and top with poached egg. Season with salt and pepper.
  4. Add the beans on top of poached egg and sprinkle with a little grated cheese if desired.
