Ingredients

  • potatoes 500g, cut into large chunks
  • salted butter 50g, softened, plus extra to fry
  • plain flour 100g, plus extra for dusting
  • baking powder 1/2 tsp

Method

  1. Put the potatoes in a pan with cold salted water, heat to a simmer and cook until tender.
  2. Drain really well then push through a potato ricer into a large bowl.
  3. Season with salt, mix in the butter, then the flour and baking powder, and bring together into a dough.
