Bacon wrapped stuffing balls

283g savoury stuffing

150g Denny streaky bacon

Tbsp. butter (optional)

Bay leaf (optional)

Olive oil

STEP 1

Place stuffing in an ovenproof dish and cover with tin foil.

For a fuller flavour add tbsp. of melted butter before cooking.

Cook for 10 minutes in pre-heated oven at 200ºC / Fan 180ºC / Gas mark 6.

Check food is piping hot throughout

 

STEP 2

Meanwhile lightly coat muffin tin with olive oil, criss-cross two streaky bacon rashers, with a bay leaf if using, in each space in the muffin tin, allowing the excess to overhang the tin.

Spoon the stuffing mixture into the tin and fold the overhanging bacon over the top to make a parcel.

Secure in place with cocktail sticks.

 

STEP 3

Bake at 200C/180C fan/gas 6 for 8/10 mins, until piping hot and the bacon is cooked. (Remove cocktail sticks before serving.)
