Toad-in-the-hole

This comforting classic is a great option for family dinner and is easy enough that the kids can help! With fluffy batter, rich gravy and delicious sausages, what's not to love! You can also pair this with some of your favourite vegetables on the side.

Ingredients:

Batter

  • 2 eggs
  • 150ml semi-skimmed milk
  • 100g plain flour

Meat

  • 8 pork sausages (can be swapped for low fat or vegetarian options)
  • 1 tbsp vegetable oil
  • 1 finely sliced onion

Gravy

  • 1 finely sliced onion
  • 1 tbsp vegetable oil
  • 2 tsp plain flour
  • 1 vegetable stock cube (200-300ml) 
  • 2 tsp English mustard
  • 2 tsp Worcestershire sauce

Method:

  1. Preheat oven to gas 7, 220°C, fan 200°C. 
  2. Start by making the batter. Place the flour in a bowl and add the two eggs. Slowly mix in the milk, then beat the mixture until smooth.
  3. Place the sausages into a baking dish. Add the sliced onion and oil and roast for 15 minutes.
  4. Take the dish from the oven and pour the batter over and around the sausages. Place the dish back into the oven and cook for 35 minutes (or until sausages are fully cooked through and batter is golden).
  5. Heat a saucepan and add the remaining onion and oil. Fry for around 5 minutes or until golden. Slowly add the flour and stir until thickened. Add in the mustard and Worcestershire sauce, and gradually add in stock, stirring until the mixture is smooth and thickened. Add the gravy to a gravy boat.
  6. Remove the toad-in-the-hole from the oven and serve alongside the gravy.
