Baked cod with onion and tomato

Ingredients:  

  • 3 Cod steaks 
  • 2 Onion 
  • 2 Tomato’s 
  • 100ml olive oil 
  • 1kg potatoes 
  • 2 cloves of Garlic 
  • 100ml White wine 
  • 1 teaspoon of salt and pepper

Method:  

  • Cut the cod into pieces. On a baking dish, place a layer of sliced onion, the cod, the peeled potatoes, place tomato’s together on the dish, chopped garlic, salt, pepper, olive oil and white wine. 
  • Bake for about 1 hour and 30 minutes. Turn off the oven, sprinkle with chopped coriander and serve.
