Add a whole chicken into the slow cooker alongside the onion, scallions, soy sauce, fish sauce. garlic, ginger, chillies, coriander, and chicken stock. Cook on a low for 4 hours.
After 4 hours, remove the chicken from the broth and remove the meat from the bone, adding back into the broth.
Add vegetables of choice to the slow cooker to soften.
Prepare noodles to package instructions. To serve, pour the broth over a bed of noodles, topping with the chicken & vegetables. Garnish with lime, chillies, coriander & scallions.
