Chicken Fillet Burgers

This recipe is quick, simple and sure to please the whole family. Serve alongside a mixed salad or some chips!

Ingredients: 

  • 2 chicken breasts
  • 1 tbsp oil 
  • 4 tbsp piri-piri sauce or other mild chilli sauce
  • ½ lemon, juiced
  • SPAR Enjoy Local Burger Baps (pack of 4)
  • ¼ small white cabbage, finely sliced
  • 2 tbsp mayonnaise
  • 4 tbsp soured cream & chive dip
  • The Greengrocers little gem lettuce

Method:

1. Place the chicken breasts into a freezer bag and flatten them with a rolling pin until around 1cm thick. Evenly cut each breast into two pieces. (If you don’t have a rolling pin, you can use a cutting board, saucepan, or even a can of tomatoes!

2. Heat a frying pans over a high heat. Add oil and fry the chicken for 3-4 mins on each side until cooked through, don’t forget to season. Reduce the heat and add half the lemon juice and the chilli sauce. Cook for 1-2 mins until the sauce is reduced, then remove from the heat.

3. Take another pan over a medium heat and add a small amount of oil if it is non-stick. Toss the cabbage in and lightly fry. Then add the mayo and remaining lemon juice. Whilst the chicken is cooking, toast the buns for 30 seconds.

4. Spoon the hummus (or dip of your choice) into the toasted buns, then top with the lettuce, chicken and cabbage, season with black pepper. Add sliced tomatoes and cheese if desired.
